How might we help our restaurant operator customers thrive in the future?

Food remains the center of culture. The pages that follow focus on how restaurants reach customers, break through a saturated market, and incorporate technology to improve efficient restaurant operations. Where good food is a given, the adoption of new practices is the variable. Those that adapt to the world outside their own kitchens will be met with insatiable appetites for generations to come. This work was born out of ethnographic research

I visited countless restaurants and explored innovative retail experiences from urban New York City to rural Kentucky. I spoke with single unit barbecue joints, airbnb dining experiences, and renowned restaurant groups to assess dining as a whole, and capture what about it, at any level, makes a restaurant thrive.
